If I select the valid certificate in OpenOffice, I am able to successfully sign a document. Trying the same with the expired certificate causes OpenOffice to crash, which deserves a separate bug report. The text I quoted is from the built-in help. The search string that took me to that page is "signing documents with digital signatures", and the text is under the "Managing your Certificates" heading.
