Thanks for the thorough review and the REST probe!
**[P2] Catalog snapshot**: fixed in 733ae52. The builder now uses
`self.table.snapshot_manager()`, like reads and commit validation.
`test_execute_plans_against_the_catalog_snapshot` serves catalog snapshot 7
over a local REST endpoint while the file system holds only `snapshot-1`. The
build plans against 7 and publishes snapshot 8 through the catalog. On the old
code the same test fails with your error ("expected latest snapshot 1, got 7").
I left the other builders alone, as scoped in your comment; happy to send a
separate fix for them.
Also rebased onto current main.
