Migrating eg. the issue tracker shouldn't be particularly hard.
also, i have a hard time coming up with another hosting service that offers all features sf does. whatever else i'd choose would be either a multi-provider solution, or would impose severe changes on the way of working.
The only feature that sf has that the alternatives doesn't, that I can think of, is integrated ML support, and the ML could be kept on sf or migrated to some other ML provider.
