I'm a Fedora contributor, which has maintain the pdftk package, which used the iText package. Due licensing issue with an earlier version of your library we have to remove your software from the Fedora project. Now, as you have release a new version, we have started a short review about the conditions in the sun.txt file I have found in the source tar ball. As you can read at https://www.redhat.com/archives/fedora-maintainers/2007-August/msg00189.html the license text contains usage restrictions which blocks the inclussion of your software into the Fedora project It will be nice, if you can take any effort to solve this issues.
