The Eclipse Foundation and IBM Canada have vetted all the copyright notices and legal aspects of iText. They had similar concerns and all SUN related code was either removed (EPS stuff) or refactored (IntHashtable). There is no longer a sun.txt file in iText 2.0.4. If for some reason you can't upgrade to iText 2.0.x (as was the case with Eclipse/BIRT), you can use iText 1.5.3.
