I'm searching for information on the same thing. What *should* be possible is using the JDK stuff to change the resolution of the screen and then using Java3D to render assets to the screen at that resolution. Currently the only thing you can really do (in OpenGL) is make Java3D render fullscreen in the resolution you're already in (which is not quite cool if you're normally running in a high resolution like 1600x1200). Hopefully this will be addressed at some point in the future by simply using the DirectX/Windows call in the OpenGL subsystem as regular OpenGL based games do.
