I've yet to try this in any way, shape, or form, but I thought I'd see what
everyone thinks first.

I have a waterfall (right now, just a bent set of planes, later on to have
particles over  the geometry to simulate it much better).  I want it to
appear that the water is moving (duh).  So I'm thinking of changing the
texture coordinates so that the texture moves over the geometry.  Is this a
good idea?  What problems will I run into with the texture coords?
