Certainly using 64bit Java on Mac O/S X use notably more memory but that is to be expected as all the pointers are twice the size. I know Sun were looking at a technique of using compressed pointers meaning that 64bit pointers would not be used if they did not need to be but I don't know if this usage is mainstream. I use 64bit anyway because I have 8gb of ram to keep my developer VMs happy and also because I like pain.
