Perhaps no one responded to your question Phyllis because they don't know the 
answer yet.  I tried creating the same problem with my own Jaws and the only 
thing I can think of is that you accidentally created an exception entry in 
your Jaws dictionary file which then automatically replaces the apostrophe with 
a space or nothing at all.
I would like to make 2 suggestions.

1.  Go to your Jaws dictionary by pressing Insert J.  As soon as the file 
opens, Jaws will tell you to press a series of keys which will bring up the 
Jaws default dictionary.  That is Control Shift D.  
2.  Tab over until your cursor lands on the list of dictionary entries.  If the 
apostrophe is in there, it will probably be read but perhaps not.  Since you 
have in all likelihood created an exception, Jaws may not read that character 
because the exception exists.  So, if you find a place where there should be an 
entry, but nothing appears to be there, then go to the next step.
3.  Press your Tab key until you hear "Remove"  or "Delete"  which is possible 
depending on which version of Jaws you have.
4.  Press Enter and that particular entry will be removed from your list.  

This is assuming that your apostrophe is missing for that reason. Before you 
exit this function, press Control S to save your changes.  

If you find this to be correct, here's the second suggestion.  Jaws has several 
different punctuation levels from All to Most, Some, None.  You may already 
know this.  Set your punctuation level to Some and it shouldn't read apostrophe 
characters at all in the normal course of reading.  

Phyllis, I make no guaranties of this process.  If your Jaws has developed some 
kind of unexplained quirk, then you might have to contact Freedom Scientific's 
Technical Support group.  But before you go that route, try this out.  While 
you're on the subject, does Jaws refuse to read the apostrophe in all 
applications or just in certain ones?
If that is the case, then you may have created an exception for that particular 
program such as Microsoft Word or Outlook Express.  
Now as for the problem with Outlook Express, Flor is probably correct.  If you 
load a word correction program from our Jaws users web site, you will have to 
get Outlook to recognize that program.  I believe these settings are somewhere 
in your Preferences section but Outlook Express is a bit beyond my knowledge 
level when it comes to settings like that.
