If Outlook 2010 is your default mail program, clicking a link to an Email address from Firefox will behave exactly as clicking on that link from IE. This is a system behavior, not a browser dependent integration. Thus, the same can be said if you use Thunderbird as your default mail handler, but you use IE as your default browser. In this instance, IE would cause Thunderbird to open in a new message.

The University where I teach is very strongly urging all of us to switch
from Internet Explorer to another internet browser such as Firefox, in light
of recent Internet Explorer security issues.

I'm seriously considering making the switch to Firefox, and would like to
know how much of a transition this will be in terms of basic internet
navigation.

Does Jaws operate in basically the same way with Firefox as it does with
Internet Explorer?

In other words, to the same basic Jaws key strokes and commands work with
Firefox?

I'm using Windows 7 and Jaws 14 here.
