When Apple released Big Sur they moved some libraries. Here's a gist that I
used to set the CFLAGS and LDFLAGS for Big Sur:

I use pyenv. About 1.5 weeks ago, Homebrew's version of Python did not work
on Big Sur.

I am not using conda for my installs.

You might want to try paperspace as a temporary stopgap if you have
difficulty. https://www.paperspace.com/
