Based on this thread there is no way to instruct current versions of K-9 to 
leave emails on the server when fetching emails using POP3.
I do not want to use IMAP (as Seth suggests) due to the confusion when 
multiple email clients on multiple devices are used to view and manage my 
email.
I'm concluding that k-9 can't be safely used for my purposes.

I will kill the current installation process on my phone so as not to risk 
data loss on my mail server.
