It would be useful to have an option in System Settings - Default Applications
- File Associations to always show the application chooser when opening a
particular file type.

Currently, one application must effectively be the default, so using another
application requires right-clicking and selecting “Open With”.

For some file types there is intentionally no preferred application; which
application I want depends on the particular file or task.

A possible option could be a checkbox - "Always ask which application to use."

When enabled, double-clicking a file of that type would show the existing
application chooser while keeping the configured application associations/order
intact.
