Because, the text reads:

And we know, Jefferson being a Deist, that his Creator had no effect
on peoples' lives past creating the universe. Thus, by direct
inference, its proper meaning is, "rights granted upon all people by
virtue of being people," quod erat demonstratum.
You seem to overlook the fact that although Jefferson was the author, he
was not writing it as though it were only from himself. He wrote it as
a consensus. In essence, the many authors were in agreement.
