One option is a simple procmail rule to bounce all mail to your gmail

You can also have GMail forward (while keeping a copy)
a message to any email address.

I've considered both these options myself, and I still end up favoring either running my own mail server or leaching off of Josh's. :)

Both of these options require two accounts: one on Gmail, and one on some other server. Then you have two server copies, which won't be consistent (I don't know about you, but I'm certainly not going to take the trouble to delete my mail twice).

Sounds like more of a pain in the ass than anything else.
