MythTV is an option if you're up to hacking it yourself. The message of
hope: I did, and if I can, any modestly endowed Linux person surely can
also be successful.

Here are some thoughts, however. (Any of these may be corrected by wiser
heads.)

1. My capture cards, PVR-150s, can work with a set-top box, but only
single file. IOW, multiple capture cards can capture from an open cable
connection at the same time, but only one card at a time can tune the
set-top box (the PVR-150 has an adorable little IR bulb on a cable that
you hang or tape on yout ST Box's IR sensor, so it can flash commands
directly from Myth to change the channel).

2. Digital is on the way, so be sure to get a capture card that will upgrade.

3. Myth w/o an internet connection is really less than half a system,
because it gets its program guide from the internet. I don't know if it
has any plug-ins that would get the program listings from your dish.

I love my Myth and wouldn't have it any other way, but if you want it to
"just work," be sure to do comparison shopping against whatever the dish
provider would supply you with ... and remember to put some value on your
time.

BTW, as a Linux app, Myth is definitely not OT around here.
