Looking at the applicances, there are many Ubuntu 8.04 appliances there which have VMware Tools installed so it's doable. I've got VMware Server v1.04 installed and see v1.05 is the next release without going to 2.0 beta. Still looking for 1.06 or even just v6.0.3 tools.
