I'm not the "you" you are referring to above, but I'll offer some
suggestions.
I have a MythTV <http://knoppmyth.net/> box with a Hauppauge PVR-150
card in it. One of the things about the PVR-150 card is that it has a
S-Video input and a composite video input along with a pair of audio
jacks for the sound. MythTV can configure one of those inputs to record
the output of a VHS tape deck. The PVR-150 also converts the captured
video/sound into an MPEG-2 transport stream that can be edited directly
on the MythTV box in case you need to chop out commercials, lead-ins,
FBI warnings, etc. The final MPEG-2 file is produced using the
mythtranscode program using the cut list generated earlier.
Once you have the MPEG-2 file, create a DVD image using QDVDAuthor
<http://qdvdauthor.sourceforge.net/> This is a nice program that can
create a DVD with a menu, automatically create chapters based on time
(say every ten minutes) and has a few other features which I haven't
personally used yet.
I burn the final DVD image with K3B <http://www.k3b.org>, one of the
programs from the KDE team.
To play the DVD on my computer I use Xine <http://xinehq.de/>
I used this sequence numerous times to convert TV shows to DVDs.
