If you do use the Gutterman 100/3 silk, you will probably be able to replenish your stocks easily at Jo Ann Fabrics if you choose one of their basic colors. As mentioned, work a front and then you can estimate how much you need for the balance. Hopefully you can wait until Jo Ann's have sale on Gutterman thread to stock up on what you need.
With regard to how much to wind; wind all the bobbins fully. You will run out at some time and have to add thread, so don't be afraid of joining in new full bobbins. If you are running out closer to the end of the piece, an extra twist with a bobbin that has more thread, with your emptier one, will not even be noticed in the great scheme of things. A bolster pillow would be nice, but some of us are not adept at the hands up method of lacemaking. I would use a nine block block pillow so that I could turn the work around where needed and move finished areas onto the side blocks. Leave yourself enough apron room for working to avoid the back ache. Luckily you won't be using hundreds of bobbins for your Russian lace. When you finish it, make sure you post a picture for us to see.
