also, there is one other setting i forgot to ask about : gloss.
so far I am generally pretty happy with gloss off when using epsons archival/enhanced matte paper. but with photo paper, and/or gloss ... I have been less then impressed.

yes we have profiled ourself the paper.
But just doing some simple test by printing some Dark RGB values shows that there's some problem with deep dark colors on this paper, with photo paper you have good result. This printer has some pigment inks that render bad on 'low cost' paper'.
Epson earn more money by selling inks and paper, so I think they are now focusing on photo paper (more expensive so more interesting for them).
