I originally used Vim, so I use Evil mode, which makes Emacs into a much
better editor (in my opinion). Instead of M-x I just hit ; in normal
mode to do a lot of things, plus I can use normal mode just like you
would in Vim.

I am slowly adding some C-<key> and M-<key> shortcuts of my own, just to
make navigating around a little faster. I also have a couple of function
keys mapped for quick things too.
Signing e-mails for example is "C-c C-m s o", but that's just the default in 
Gnus.

At work I have a docked laptop running Fedora with a Ducky DK2108S (Cherry MX 
Blue
switches) and a set of blank DSA key caps that I custom ordered.

At home I have a desktop running Fedora and a Unicomp Ultra Classic
(basically an IBM Model M, but with USB) keyboard.

I never touch the mouse inside emacs, it's not necessary, especially
with vim keybindings.
That being said, I have a normal cheap $5 mouse at home, and a Kensington
Expert Mouse (trackball) at work.

I just use QWERTY and touch type as I was taught in school about a
decade ago. I've thought about getting a wrist pad but of everyone I
know who works with computers all day I don't know anyone with RSI.
