There are a lot of people here who do not like using Unknown in place of
an unknown name and Legacy itself suggests that you shouldn't do so, but
I have no compunction in doing so myself.  In the circumstances you give
I would create a new spouse and call him/her Unknown Unknown.

I expect several people will be along in a moment to tell you what they
use rather than "Unknown Unknown."
