Well, that one's easy - Loose sheets.  It would be Bound Volume if the
Will was one of several in a book or similar.

I have 3 SourceWriter Sources for Wills - Prerogative Court of
Canterbury, Principal Probate Registry and Chester Probate Registry.

Personally, I haven't found using Source Writer a problem at all:  I
just ignore the fields which aren't necessary or don't apply.  I find it
much easier to use SourceWriter which guides me to enter all the
required information than to use the Basic System and risk being totally
inconsistent and omitting important parts of the Source.

I have bought the PDF version of Evidence Explained and find it quite
helpful.  It does have examples for loads of Sources from outside the USA.
