For a long time now Legacy has had married name section on the marriage information form. If the woman did not adopt her husband's surname you can use that to keep her maiden surname. The rule you chose there will apply only to that marriage.
There is also a global option you can set to keep Legacy from replacing the wife's surname. Go to Options > Customize > Data Entry. the default rule can be set on that screen. If you change the rule you can click the apply button to apply the change to all existing marriages and then all future marriages you enter will use that rule.
