I found a workaround to keep working with my workbooks. In the Data >
Consolidate menu, I delete the thousands of rows that were automatically
created (CALC takes several minutes to complete the task). Then I manually
create an artificial row in the “Consolidation Ranges” text box (using the
“Source Data Range” text box and the “Add” button), as well as an artificial
value in the “Copy Result To” field. Finally, I save the workbook (as an .ODS
file). 
Result: My workbook now saves normally in .ODS format.

Unfortunately, when I delete the artificial row I added and the “Copy result
to” value from the Data > Consolidate menu (which CALC now does very quickly),
that source row and target value automatically reappear after I save the
workbook! 
Fortunately, this no longer prevents me from working, as the automatic recovery
saves and the workbook save are now very fast.

Consequently, the two bugs are still present: 
+ automatic re-creation, after saving the workbook, of the source and target
values deleted in the Data > Consolidation menu; in .ODS or .XLSX formats;
+ abnormally long duration of the workbook save in .ODS format (but not in
.XLSX format) when there are thousands of rows for the consolidation ranges.
