Hence my question with regard to the number of files in your Documents folder
in comment 17.

It might be helpful, for future reference, if you could provide us with this
information, and also the size and distribution of number/file sizes with
regard to the folders into which you are trying to save your LibreOffice files.

With previous versions of MacOS, there were some reported issues of excessive
file descriptor opening (and corresponding memory consumption), perhaps this is
what you are seeing.

Setting to NEEDINFO.
