As Dave Jones is running Ubuntu it is likely packaged like Debian. If it
is - check that you installed the package xfonts-x3270-misc. On Debian
package x3270 only recommends it. But if you don't install it your
screens are hard to read.

X3270 without its "real 3270 look-alike" fonts ... well ... it sucks.
From the tone of your note, Dave, I think you do NOT have the true X3270 fonts.
You may have loaded them, but they're not in the "fontdir" file.
Try running 'mkfontdir'.
