David: You shouldn't ever need to start up runlevel 5 on a virtual server. In fact, without a graphic capable console, it won't even work.
What you do need to do is investigate why X forwarding isn't working for you. First, are you logging in as root or as a non-root account? That'll make a difference in a few steps Second, does some simple test like running 'xeyes' or 'xterm' display? If not, stop here and diagnose why not. insure that you're running an x windows display service on your workstation. Insure that it's configured to accept remote connections, or locally forwarded connections via ssh. Assuming you're running windows, I've had good luck with the combo of XminG and Putty. Give those a try. I've had bad luck configuring cygwin + cygwin/x to work with ssh X11 forwarding. If you're running linux or osx, it should all 'just work'. Third, if running xeyes or xterm works, then try running yast. Here's where the first question becomes important -- if you're logged in directly as root, you don't need to investigate further. If you're logged in as a non-root account, then using 'sudo' might break X11 forwarding for any graphics program you run, and you might have to take special measures.
