This can be hidden with /etc/issue, On RH machine rc.local overwrites this
file, so just comment out those lines.
Coming back to original question, most of the server admin ( 95%) do not
bother about the os and version being displayed through telnet, ftp, smtp
etc for best reason known to them.
For the rest of 5% you will need nmap which has excellent capability to
detect os and version no based on response to udp/tcp packets, read
manpages of nmap.
