the sender is set by your MUA (mail user agent - mutt, netscape, whatever).
Only bounces (that is, MAIL FROM:<> - null sender) will go out with that
default - MAILER-DAEMON (which you can change to something fancy like
postoffice / delivery etc, as long as you alias that to root, so that it
exists)
And it's not just me asking y'all to use sendmail.mc - try asking the sendmail
developers (on comp.mail.sendmail) - they keep repeating the same thing, ad
infinitum, in fact, they say "consider sendmail.cf as a binary file compiled
from sendmail.mc - and treat it as such, dont edit it directly) :)
Wise advice - or try upgrading your hand-edited sendmail.cf when you upgrade
sendmails (or find that your hand editing to fix something has broken something
else ...)
