Aside from the standard security patches required?
Do remember that redhat's security policy has changed from a more or less
wide open by default config to a more security conscious model.
Hassle is that, the security has been rather arbit - sendmail compiled
with tcpwrappers and listening only on 127.0.0.1 by default is fast
becoming FAQ material on comp.mail.sendmail these days :)
I'd strongly suggest reading the redhat 7.1 release notes (available in
the docs that come bundled with the distro) before bringing up a
production server on 7.1 - even if you have been running redhat or other
linuxen for quite some time.
Otherwise, its a matter of your individual likes and dislikes for a
particular distro ...
