The server from which you receive mails is called pop3 server.
The server you use to send your mails
to outside world is called SMTP server.
In Linux, you use fetchmail to download mails from a pop3 server, mutt
to read those mails and type in replies,
and sendmail/exim to send out the mails to a smart host or directly to
the recipient.
