Are you using udev on your Debian Sid box ? If yes, changes need to be
made. Whatever the case, the path you're providing for the mouse in your
XF86Config-4 file, check the path and verify if the device file is
present there or not.

Kernel-Image:
Running pre-packaged kernel images from Debian is definitely better than
compiling your own, until you don't have a very good reason for why you
want to compile your own kernel. For eg: there might be dudes interested
in the bootsplash project (Well! I've heard very less about it on the
list yet). For bootsplash to work you do need to patch your kernel
because Debian source kernels aren't patched with it (AFAIK).
I hope you re-compile your homemade kernel's the Debian way !

The kernel panic errors can be for multiple reasons. If you are creating
a kernel image without initrd support, REMEMBER to statically enable
support for your IDE/SCSI disks into the kernel. There are more issues
to be considered besides this. Better refer the Kernel-HOWTO and Google.
