A mailserver which is choked on CPU rather than disk? Highly tuned system, or too much content filtering. Methinks you need to start with a SPEWS++ like effort locally.
We got us a guy who can tune postfix so that it is CPU bound rather than IO bound.
And we do a bit of content filtering as well (executable attachments and assorted other stuff)
