OK, Let me tell you what an ideal email system would look like. This
assumes you have $$$ to burn, hence feel free to chip off what you
like.

0. For the switching of the LAN 2 x Cisco 3570 Gigabit stackable
switches. Each box should have one NIC on one switch and the other NIC
on the other. These are stackable switches, hence I believe no
port-channeling is needed.
1. At the front: a Loadbalancer in HA configuration. Cisco CSS is
preferred, but there are others too (even Linux based).
2. A number of high-end servers behind, with an MTA (Courier will be
my choice). If I were buying, I'd go for IBM x-336 or HP DL360
servers. Dual processor, dual disk (in RAID 1), dual NIC (in bonded
config). Maildirs exported from a central place via NFS.
3. A NAS. NFS exports for the mail spool. Redundancy in the NAS is
another topic altogether. Vendor: EMC.
4. (1) and (2) Connected to the internet via a fat redundant pipe.
OSPF is the best to load balance between the redundant pipes. You
should have 2 x Cisco 2621 routers, in HA configuration again.
5. Replicate (1) and (2) with another ISP.
6. Dual power supply, connected to different providers (say BEST and
REL, for example). Dual generators. Dual UPS. Basically, two of
everything.
7. Enjoy the five-nines uptime :)
8. Wonder whether the investment is worth it or not.
