You can, of course, edit your /etc/XF86Config file. But I would strongly
recommend reading all of the documentation first. Basically, put your highest
resolution first in the place where it lists the available resolutions.

Another solution is to use a different X configuration program. I use
XF86Setup, which outputs a much easier to edit file (it won't list every video
mode in existance).

Sure, and it's saved my monitor from a flaming death several times. It's
<ctrl+alt+backspace). You can also switch your video resolutions with
<ctrl+alt+"+"> or <ctrl+alt+"-">
