Now you're in my area of expertise...the difference between making a UI
easily learnable, and making a good UI for expert users.

You're right, but not because of text vs GUI. Expert users prefer an
interface where they don't have to take their hands of the keyboard. This
is mainly because expert users know where each key is (I can save in emacs
using [ctrl]-x [ctrl]-s without looking. To use a file-menu and the mouse I
have to look where the mouse cursor is and move it to the menu, then find
the right thing on the menu, etc (this is even worse with those bloody
awful Microsoft menus that change each time I use them). Hmm. I might
stop here before I go too deep into psychology...


However, I never want to be an expert user at installing Linux where I can
install Debian with my eyes shut (although I almost am now). The majority
of users are going to install software once. An easily learnable interface
is what you want...and you're stuck with a GUI.
