I was looking at something very similar recently.  The CR51 has a single
100Mb NIC on-board (probably RTL8139{A,C} based).  Ascent (and likely
other places) have low-profile dual-port Intel 1000Mb NICs, which should
fit into the CR51's case[0].

Your other option would be to buy one of Soekris' machines[1].  The
net4501 and net4801 both have three on-board NEC NICs, and they'll run
Linux without trouble (they are very close to a "normal" x86 machine).

[0]  I haven't tried it, but those NICs are definitely low-profile, I've
     put them in 1/2U systems with no problem.
