I know I was thinking more along the lines of client-end mail processing, like small mailservers with imap, clamav, spamassassin and so on :-)

Or perhaps the basics of envelope, header, multi-part body? For people getting into mail filtering with procmail, it really helps to grok the envelope, which is difficult for people on the end of a pop mailbox.
