Personally I install with the three boot floppies and download the current packages as needed. An apt-proxy server helps save download time of course.

Yes, RTFM http://www.debian.org/releases/stable/i386/ch04s01.html.en "Although a full set of binary packages requires several CDs, it is unlikely you will need packages on the third CD and above." You could also consider ubuntu as it supports a wide variety of packages and tends to be more up to date.
