try to use XAMPP <http://www.apachefriends.org/en/xampp-win>. Will be
easy to use (intuitive), is open-source, cross platform. In Win you will
have to run few programs before typing localhost/index by
double-clicking on them (they will start the AMP), so I do not know if
you can get easier then this. Also, can run from a memory stick, if you
are using the binaries.
(If I remember well if IIS is still working can mess up with your Apache
server. If that is the case you must use the port 8080 for Apache
instead of 80 or to shut down the IIS.)

I've got my father running this, and he now has far more understanding
of the linux webserver I run for him. It did take him a while to get his
head around it all to start, but then he is 72!
