While I've got xfce installed from Caldera RPMs, I might try downloading the source and compiling as you suggest to get a more current release. I was more interested in the steps required to switch login managers, though (from kdm to gdm or xdm). I have a working xfce install that seems to work properly if run from runlevel 3 by executing startxfce, but doesn't work properly when called from kdm. Caldera's 3.1x has no /etc/sysconfig/desktop file to 'change DESKTOP="KDE" to read DESKTOP="GNOME"'. So I really wanted to know was what RedHat DOES when you make that change. I assume that somewhere along the line, it runs gdm instead of kdm.
That being said, it was simply a case of me wanting an answer to a question without doing the work. After diggin' a little, switching login managers under COL looks pretty easy. AFAICT I just edit /etc/rc.d/rc.gui and re-order the 'DMs=' line (currently, /opt/kde2/bin/kdm is listed first) so that /opt/gnome/bin/gdm gets listed first, then make sure xfce is included as a session by creating an XFce file under /etc/X11/gdm/Sessions/ that'll run startxfce.
