I've noticed the same problem you've been having but with the Creative
Optia *AF*.
 
When I plug it into a machine that only has low/full speed usb (max
12mbit/s), either the driver or the hardware restricts me to MJPG at a
max res of 640x480 (with poor quality). If I plug it into a machine with
hi-speed usb (max 480mbit/s) then I can choose MJPG (with better
quality) or YUYV with a max resolution of around 1600x1200.  Something
must happen at the webcam interrogation to determine which formats are
available.

Check your logs when you plug in the webcam.  If it says xxx_ohci
instead of xxx_ehci, then you're probably just running at lo/full speed.

The fix for me was to either run on a machine with a better usb
controller or to make sure your xxx_ehci module is running (check
through modprobe). Or possibly checkout the latest version of the
uvcvideo module from svn.
