If i understand correctly:
2x80GB IDE in RAID0 on NForce MB
+ 40GB IDE drive alone.
The "RAID" that the NForce chipset uses is software based, i.e. you
need to load drivers for the host OS to see and use the RAID-ed drives
correctly. (Someone can step up and point out if I'm wrong, but this has
been true since 1998 -maybe before- and installing an OS on a device
that the OS doesn't have drivers for can be an interesting experience.)
Any way, the only way to RAID0 those 2 drives would be to create an
install disk that has the (do they even exist?) NForce Linux RAID
drivers, and supply that for your install. I don't think such exists,
though.
If that's the case then you can only install Linux on the 40GB
drive, or de-stripe your RAID0.
As for a MP3 media player I suggest you use
http://www.fedorafaq.org/ for more info on that.
You mention having install problems when using a graphical mode,
both in FC5 and in Gentoo. That I must admit is a bit odd. Could you
give us more hardware information on your setup?
