This is a bit misleading. when you install Fedora it gives you these choices and packages are lumped together for installation purposes.In either case you can install desktop, server or development packages. The difference is that Fedora does this at the time of installation. However, Ubuntu uses a live disk and Fedora doesn't. It gives you a workable desktop computer running from the CD. From this you install to hard drive. Upon rebooting you can go into Synaptic and install all of the server and development packages that you could ever want. You will actually find the number of Fedora packages limited in comparison to what Ubuntu offers.
It was also said earlier that Fedora is bleeding edge.This implies that Ubuntu isn't which is far from true. Ubuntu has a regular development schedule. New versions come out twice a year, April and October. You can download the next version code named Hardy Heron and try all the bleeding edge software you want. Ubuntu was one of the first distros to show off KDE 4 and implemented Compiz then Beryl and now Compiz-Fusion before most other distros got around to it.
