The other categories, like internet should be no problem, since firefox comes with the installation, and having fewer choices will be easy to overview and select. But for sound and video, I might recommend MPlayer, which you will need to install: sudo apt-get install mplayer which will probably provide all you need for media players at first anyways. You will need to get the codecs and libraries from the Medibuntu repositories, which is explained on this link: https://help.ubuntu.com/community/Medibuntu
You may want a sound recorder of which audacity is a good choice, since it, I believe, has more features/capabilities than the installation sound recorder.
