The log looks fine from a capture perspective. I would look to network, server, or possibly VM issues.
Are you using a fixed disk? Assuming you are using Gen1 since its Win7? How big is your disk and how big should your image be? Are you using an IDE disk or SCSI disk? You could also enable debug logging in WinPE, I haven’t don’t that with a capture before, but it might give more info.
