Sorry for the late reply, am swamped with work.
Me too. Work, two funerals and a wedding. This has been a crazy
summer for sure!
There're 2 pins protruding out of the motor, which I assume is where
I'm supposed to connect the controllers and batteries to?
I also have a DC-DC converter which I have no idea at all where to
connect it to.
Take a look at the wiring diagram I put on the website. It's not a
schematic. It's just a block diagram that shows the basics of what
goes where.

I hope to have a detailed schematic available before the next decade.
Until that happens this one might help:

For the time being, I'm mostly alternating between school reports
and building of the solar car which we'll be racing at the Suzuka
circuit on the 5th.
Suzuka... pant pant pant.
Is there anything specific I should get?
Or will typical copper electrical wiring do?
You want the kind of wire that has lots and lots of strands in it. I
use welding wire from McMaster. The number 4 AWG wire has 100's of
strands. This helps make the cable for flexible. For your bike I
would think something like 6 AWG would be plenty. I think that's 4mm.
