options:

1. Not write a book, it will be out of date BEFORE it's written (as a rule!)
unless you're writing it about SPS 2001. (i kid!)

2. ALWAYS write about bleeding edge (RC or higher).  If it's been released
publicly that's what you cover without question.

As a side note, perhaps on your website have a "alternate book appendix"
where by you:
-have screenshots indexed by page or picture ID for old versions
-have screenshots indexed by page or picture ID for NEW versions

THat way I buy the book, and can read the text but look at the screenshots
on the web if I need to.  Perhaps even offer them as PDF to print out, so
that ingenious people can tape the pictures over the old ones.
