We have a gimaled stove that also has a barrel bolt that locks it in place.  We 
do cook at sea.  The cook chooses to lock the stove down with the bolt most of 
the time.  She feels that the dynamics of stuff sloshing around in pots and 
especially fry pans is better when the stove is not moving.  We scale back the 
scope of cooking in heavy weather.  We do have clamps for two pots, but don't 
use them much..
